Garam masala gives this dish its unique Indian flavor. Chicken â 2 servings â 1 hour INGREDIENTS - 150g boneless chicken breast
- 1 sliced onion
- 1.5 cloves chopped garlic
- 15g minced ginger
- 3 tbsp tomato puree
- ½ tsp garam masala
- ½ tsp cayenne pepper
- ½ tsp chili flakes
- 120g brown rice
- 450ml water
- 40g raisins
- 60g fresh spinach
- 20g roasted pine nuts
- ½ bunch of fresh cilantro (coriander)
- 3 tbsp fat-free yogurt
- 3 tbsp soy yogurt (unsweetened)
- 1 tsp coconut oil
- Unrefined salt
- Black pepper DIRECTIONS - Heat coconut oil in a pot. Sweat onions, garlic, and ginger on medium heat for approx. 2 minutes. - Cut chicken breast into 1cm (½ inch) thick strips and add to the pot. Stir-fry chicken on medium for 5 minutes or until the chicken strips turn a golden brown color. Add tomato puree and spices, then stir thoroughly. - Add rice, water, and raisins to the pot, close lid, and leave to cook for approx. 30 minutes or until rice is soft. Stir occasionally. If necessary, add water. - Remove pot from stove and stir in spinach until it wilts. Serve with a side of yogurt sprinkled with pine nuts and chopped cilantro.
