Chicken - 2 servings - 25 minutes Thai Mango Chicken Salad An intense collision of flavors. An Asian evergreen. This dish is so multifaceted, you’ll never get tired of it! Chicken - 2 servings - 25 minutes INGREDIENTS - 250g boneless chicken breast - 1 mango - Half cucumber - 2 spring onions - 2 grated carrots - 40g fresh spinach - 40g mung bean sprouts - Half sliced chili pepper - 40g roasted peanuts or cashews (unsalted) - ½ bunch fresh cilantro (coriander) - 1 lime (zest and juice) - 2 tbsp low-sodium soy sauce - 2 tsp honey or maple syrup - 1 tsp sambal oelek (Indonesian chili paste) - 2 tsp sesame oil or peanut oil DIRECTIONS - Cut mango and cucumber into chunks and spring onion into slices. Mix grated carrots, spinach, sprouts, and chili. Chop or crush peanuts (or cashews). - Cut chicken breast into 1 cm (½ inch) strips. In a pan, heat half of peanut (or sesame) oil. Stir-fry on medium heat for approx. 5 minutes until golden brown on all sides. - Combine lime zest and lime juice with soy sauce, honey (or maple syrup), sambal oelek, and remaining peanut (or sesame) oil. Drizzle dressing over salad and serve topped with chopped cilantro, chicken strips, and crushed peanuts (or cashews).
