[A jar of Thai green curry paste is an essential in my pantry. In fact right now I’ve actually got three stashed in there, because I never want to be without it for the moments when I want to add bright, fresh, spicy flavor to a quick dinner. For a silky and very green sauce, I purée it with spinach and coconut milk to pour over ginger-scallion meatballs and noodles.
