It’s the perfect thing to serve a family on Valentine’s Day: comforting with heady—but not overtly spicy—spices, crispy bronzed skin, and shreddably tender meat. If whole legs are too intense for your brood, it can easily be made with just thighs or drumsticks or a combination of parts. And one other trick: While the braise cooks, the yogurt will curdle and start to look less cute than you’d hope. Don’t fret. While the recipe instructs you discard it, it’d be real shame to toss out all that flavor. Instead, after you take out the cooked chicken, pour the braising liquid into a blender (or use an immersion blender) and blend on low just to emulsify the sauce. It will all come together into one bright, turmeric-tinted, chicken-infused sauce you can use to finish each plate.
