Spinach dip made with mascarpone cheese is an absolute winner! It's much lighter (in texture, not in calories... sorry!) I’m normally all over anything served warm, spreadable and dippable, but I had never met a spinach dip to fall in love with, that is until now! Most recipes that I’ve seen call for sour cream and cream cheese, and the combination of the two heavy ingredients make the spinach dip too thick and hides the flavor of the spinach. The solution that I found was in a cookbook called "[In a Cheesemaker’s Kitchen]( by Allison Hooper, founder of the Vermont Butter and Cheese company. At our place, it’s all about kicking back with a massive snack plate filled with veggies, cheese, sausage and crackers, while we dive into some lively card and board games. It’s a laid-back evening filled with tasty bites and a bit of friendly competition. (I might just be the reigning card game champion around my family). Just before calling it a night, we all get to unwrap a single present, adding that extra touch of excitement to the festivities.
