Weekly Update: 🌻 Welcome August in With Weekly Ways To Simplify Your Life! 💕

  It's a new month, {NAME}! It's still very much summer where I'm at, but I'm already looking forward to fall and for this blazing heat to cool down a bit! The monsoons have been creeping in slowly as well. The weather in Vegas always seems a bit confused this time of year. One of the best things about this time of year is that all my plants are THRIVING with so much sun! 🍁 This monster of a plant is a Sedona Sunset Coleus that I received from my assistant about 3 months ago. It was only 6 inches in height then, and now it's almost a full-grown bush! It starts out green and turns red with sunlight, and as you can see, this one has gotten a lot of sun.🌞 It's also a super easy starter plant for anyone who hasn't had much luck with plants. I think we may all have these moments, but sometimes I catch myself doing something the most COMPLICATED way possible. I’ve overthought the thing. Made it WAY more complex than it was to begin with, and that’s usually because I’ve gone way out to sea with ideas and I’m drowning in the details. It’s not until you take a big step back, remove yourself from the pixels, and refocus your eyes to see the whole picture. It’s moments like these that I remember a profound old acronym… K.I.S.S Keep it simple, stupid! 😂 (Okay, maybe it's not that profound. But it helps!) I know giving your life a rehaul is no easy task, so we’re dedicating the whole month of August to Simplifying Your Life with weekly tips to reflect and assess where we really want to spending our time and quick and easy recipes!  Scallops With Apricot Sauce! It's officially AUGUST!! And you know what that means... We're in that time of the year where some of the most delicious bits of nature become seasonal! August is the best month for enjoying stone fruits like peaches, apricots, plums and cherries. 🍑🍒 So this week, we're diving into this Scallops with Apricot Sauce recipe, a dish inspired by one of my favorites at Blackfin Bistro in Key West. It has since been removed from their menu and I have since moved from Florida, so you know I HAD to try and replicate it at home!
