By the time I’d tracked him down, he’d been slacking in a daylong massage, like some kind of pampered pooh-bah. "Breaux," I said, "you’re not done yet; I need you on October 2." He chewed on this thoughtfully, as if it were a butter-slicked stone crab claw, and looked me dead in the eye. “I do have a very particular set of skills,” he said. “Skills I have acquired over a very long career. You already know that [Shaker]( is a linchpin in the city’s new-school barbecue insurrection, but for some reason, his exemplary central Texas-style barbecue took a back seat to his double-smoked brisket smashburger on the Ludlow patio this summer. No more. This Monday, he will look for you, he will find you, and he will kill you with a classic Hill Country barbecue platter, headlined by 14-hour, post oak-smoked prime brisket; peppery beef hot links, mac and cheese; beans; thick Texas white bread; pickles; and sauce.
