Laos to Your House returns to Monday Night Foodball [READER]( [Food & Drink]( July 14, 2023 On Saturday nights, Lucky Seuamsothabandith kicks back with his buddies, drinking Henny and Perrier. There’s always a spread on the table, and it invariably includes yum seen, the minty, chili-flecked beef salad with red onions, lime, fish sauce, and toasted rice powder that’s the ideal Lao drinking food. “I try to outlast them,” says his daughter Stacy Seuamsothabandith. “But I’m in bed by 12 AM, and they’re still hanging out until 3 AM. It’s impressive!” That’s on Saturdays. On Mondays—this Monday, July 17, actually—Lucky’s going to be working the grill at Ludlow Liquors when Laos to Your House returns to [Monday Night Foodball]( the Reader’s weekly chef pop-up. A lot has happened since Chicago’s only Lao restaurant broke out of its ghost kitchen in the Hatchery and made [their pop-up debut]( at Foodball. For one thing, Stacy quit her corporate headhunting gig to focus on LTYH full time with her brother, chef Keo. Her husband Byron Gully is working on launching a line of packaged sausages, jerky, sauces, and curries. And Lucky put his legendary Quad Cities egg roll truck on hiatus so Keo could also focus on LTYH, which has significantly increased its [presence]( on the pop-up circuit. This time, they’re coming in hot with a menu of Lao drinking food—gam—including the yum seen, a dish that has only appeared on one previous LTYH menu; along with another premiere: barbecued ribs with yum salat, a side salad with an uncommon egg yolk dressing. “It's a super creamy, rich dressing that has all of the different flavors: salty, sweet, and sour,” says Stacy. Build your own spread with fried wings with a spicy garlic oyster sauce and sticky rice; goong hom pha—shrimp in a blanket; a couple variations on LTYH’s lemongrass-packed sai oua pork sausage; the lotus-shaped crispy cookie khanom dok bua; and the return of a dish that never fails to bring me to my knees: nam khao, a crispy, herbaceous, curried rice salad, with tangy fragmented pork that smothers the pleasure centers with deliciousness. “It’s one of the gems of Lao cuisines,” says Stacy. “It’s different than [the Thai version]( because it’s not as sweet. You wrap it in the lettuce wrap. It makes for a unique experience.” Linger late into the night with your own Henny and Perriers, and maybe buy Lucky a shot when he gets off grill duty.
