It's infused with flavours from the coasts and mountains, coupled with a winemaking tradition that goes back to Roman times. SLOW COOKER KALE AND CHORIZO SOUP Inspired by Portuguese caldo verde, this hearty, richly flavoured soup is a yummy way to use up an entire bunch of kale in one go. It freezes well, so leftovers make quick and easy lunches all week. The soup thickens as it stands; thin with water and adjust the seasonings as desired when you reheat it. [RECIPE]( BOLA WITH HAM The Douro region is well known for bola, an olive-oil-based pastry filled with onions and ham, meat or salt cod, and served as an hors d'oeuvre. Presunto, Portuguese cured ham, is most similar to Spain's serrano ham. If you can't find either, use a dry-cured or smoked ham. The dough is oily and soft but quite easy to handle. [RECIPE]( GRILLED SARDINES WITH POTATOES AND PEPPERS Grilled sardines is perhaps the most iconic dish of Portuguese cuisine. Here it is served in a simple yet elegant way. [RECIPE]( CRUSTED BAKED COD WITH TARTAR SAUCE [RECIPE]( PIRI-PIRI BARBECUED CHICKEN Traditional Portuguese piri-piri chicken is notorious for its spiciness. This version mixes a little bit of that heat with classic North American barbecue flavours. Grilling the chicken over indirect heat allows it to cook through without charring the skin. [RECIPE]( PORTO-STYLE TRIPE Citizens of Porto are known throughout Portugal (and, indeed, Europe) as "tripe eaters." Porto was home to the Portuguese navy and, for most of the 18th century, an important port for the British navy. Porto supplied the ships with huge quantities of salt beef, leaving the city with only the trimmings and innards, which evolved into this famous dish. The ingredient list might look daunting, but it's actually easy to prepare – it just requires lots of time and lots of pots. You can simplify it by eliminating some of the traditional meat ingredients. You can also substitute the calf's or cow's foot with veal shank. Tripe lovers will probably want to increase the tripe by up to double the amount. Porto-Style Tripe is always served with white rice.
