Luckily, I've learned how to save myself time and stress by baking cakes up to a week ahead of time and freezing them. Just wrap room temperature cakes in a few layers of plastic and stick them in freezer. On the morning of the event, take the cake out of the freezer and let it return to room temperature, then frost and decorate as usual. The cake always turns out perfectly moist and delicious, and you'll be a lot less stressed when you’re done!
