In Today’s Good Thing, we’ll explore how a good daily moisturizer can make all the difference, and I’ll tell you about the one I use and solemnly swear by. In today’s Cooking segment, I’m sharing one of my favorite weeknight dinners to make during the summer. Marinated in garlic and lemon then grilled to lightly charred perfection, these chicken skewers are as simple as they are delicious. COOKING Grilled Garlic Lemon Chicken Skewers [Photos of garlic lemon chicken skewers.]( Marinated with lemon and garlic and lightly charred on the grill, this is chicken at its simplest and tastiest. There’s a lot to love about grilling during the summer. It doesn’t heat up the house, for one, and it adds a depth of flavor that enhances even the simplest recipes. These garlic lemon chicken skewers are a perfect example of the simple magic of summer grilling, and they’re a crowd-pleaser too! Here's how to make them: In a mixing bowl, whisk together 3 tablespoons of olive oil, the zest of 1 lemon, 3 cloves of minced garlic, 1 tablespoon of minced fresh parsley, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Cut 1 pound of boneless, skinless chicken breasts into 3/4 inch pieces, then place them in the mixing bowl with the marinade and stir to coat. Cover the bowl tightly and place it in your fridge for at least 2 hours (or up to 8) to marinate. When you're ready to cook, preheat your grill to medium. Thread the marinated chicken pieces onto metal skewers (or bamboo skewers soaked in water), then grill them for 8-12 minutes, turning them over halfway through, until the chicken is cooked through. [See the full recipe ➜]( JILLEE'S PICK 'Cutting For Stone' [An image of the front cover of ]( [Cutting for Stone by Abraham Verghese]( is a novel about Shiva and Marion, a pair of twin boys who are born and raised in an African missionary hospital. It's a captivating story with elements of Indian and Ethiopian history and culture, traditional and modern medicines, revolutionary politics, and emotional family drama. It does have a bit of a slow start, but I'm very glad I didn't let that deter me from seeing this one through. The beautiful writing, compelling characters, and fascinating setting made reading this book feel like I'd stumbled upon a hidden treasure, an experience I'm sure every reader can relate to. If you're squeamish, be aware that this book features medical and surgical procedures that are described in detail. With that said, I thought the author, who is a medical doctor himself, described the procedures in a very accessible and interesting way. Cutting for Stone is equally heartbreaking and uplifting and has a satisfying, full-circle conclusion. It left me speechless, and I'm sure you’ll feel the same if you pick this one up.
