I don’t know the exact number of times I've made rice krispie treats over the years, but I’m sure it’s near triple digits. It was my go-to easy dessert for years after Kell was diagnosed with celiac (though I wish I'd learned sooner that Kellogg’s Rice Krispies aren't totally gluten free—but you live and learn.) The gluten debacle notwithstanding, our affinity for homemade rice krispie treats is still very much alive and well. And since we had a partial bag of marshmallows left over from making s’mores on the 4th, my first thought was to make rice krispie treats. We didn’t have quite enough marshmallows for that, but I wasn't disappointed for long. I had a vague memory of writing about single-serving rice krispie treats on my blog ages ago, so I dug up the recipe and made one, and now I can't believe I ever let it slip my mind!
