May 16, 2022 [View Online]( Good morning! While I love the flavor of smoked and grilled ribs, cooking outdoors isnât always a practical option. Luckily, the delicious barbecue spare ribs in Todayâs Good Thing are easy to throw together in your Instant Pot or slow cooker, so you can enjoy sweet and sticky ribs any time you want. And in today's Monday Motivation, Iâm recounting an experience I had that reminded me of the simple power of kind words. I hope you'll join me this week in using that power to build up others. Jillee TODAY'S GOOD THING These Easy Spare Ribs Have My One True "Secret" Ingredient [Photos of barbecue spare ribs.]( It wasn't a secret because I didn't want anyone to knowâI just didn't want my kids to know! These spare ribs have been a staple in my family for decades, and now that I've adapted the recipe for the Instant Pot, theyâre quicker and easier to make than ever. Iâm glad my kids are past the stage of refusing to eat anything unfamiliar or out of the ordinary, because now I donât have to be sneaky when I make the sauce. Back then, they would have thrown a fit about the small container of baby food prunes that makes the sauce deliciously sweet and sticky, but luckily those days are behind us. Hereâs how to make them: Season 3-4 pounds of boneless pork ribs with salt, pepper, onion powder, and garlic powder. Set your Instant Pot to Sauté and add some oil, then once the oil is hot, sear the ribs well on both sides before turning it off and setting them aside. Add 1 cup of brown sugar, 1 cup of ketchup, 8 ounces of drained crushed pineapple, 1 teaspoon of garlic powder, and 2.5 ounces of baby food prunes to a bowl and stir well to combine. Brush about half the sauce onto the ribs, coating them on all sides, then place the ribs in your Instant Pot along with 1/2 cup of water. Select Pressure Cook and set the timer for 25 minutes, then allow the pressure to release naturally until the pressure indicator on the lid drops. Remove the ribs from the pot, brush most of the remaining sauce onto them, then stick them under your broiler for a minute or two until the sauce is sticky and caramelized. For me, few areas are more âout of sight, out of mindâ than the inside of my car. Whenever I used to get in it to go somewhere, I was often greeted by a mess I had noticed earlier but forgotten about, like dust on my dashboard or granola bar crumbs in my cup holder. But addressing these messes got a lot easier once I started keeping a few cleaning wipes in my center console. Sometimes Iâll grab a few homemade wipes and put them in a ziplock bag, but other times Iâll just grab a travel-size pack of wipes while I'm at the store. Either way, having a few wipes in my car makes it easy to clean up those messes while they're still top of mind. I also enjoy peace of mind on longer car trips knowing I can take care of spills fast! STAY SAFE OUT THERE In The Interest Of Avoiding Interest Rate Fraud [Photos of Jillee looking at her credit cards.]( Find out why you shouldnât trust those calls about lowering your credit card interest rate. According to the Federal Reserve, credit card interest rates are an average of 3 percentage points higher today than they were a decade ago. That's nothing to sneeze at, and it also helps explain the increase in cases of interest rate-related fraud. This type of fraud typically takes place over the phone, either in the form of an automated message with an offer to switch you over to a low- or no-interest account, or a call from a live person who claims they can help you negotiate a lower rate with your provider. The scammers behind these calls may ask for personal and financial information so they can steal your identity, or they might ask you to pay a fee upfront for their "services." (These services are usually things you can do for free, like transfer your balance to a lower interest card or get a new card with a 0% APR introductory offer). If you get a phone call about a lower interest rate, the best thing you can do is hang upâeven responding to a prompt to press a certain number can lead to additional spam calls. If you're interested in seeking a lower interest rate on your card, you can always call the number on the back of your card and ask! MONDAY MOTIVATION Be Somebody Who Makes Everybody Feel Like Somebody After our new leather sectional was delivered a few months ago, I decided the occasion called for a trip to TJ Maxx so I could pick out some new throw pillows. (But really, what occasion doesn't call for a trip to TJ Maxx?) While I was in the checkout line to buy the pillows Iâd picked out, the manager of the home decor department mentioned that he loved the pillows Iâd chosen and said I had a âgreat eye.â His comments meant so much to me because while I really enjoy decorating my home, thereâs a self-conscious part of me that wonders if Iâm âdoing it right.â Because he took 30 seconds to compliment my pillow choices, I felt good about myself, and my good mood lasted all day that day. Iâm sure you can think of times in your own life when someoneâs kind words made you feel good about yourself. We shouldn't forget that we have that power tooâwe can all make someone else's day by taking the time to share a few kind words. I encourage you to join me this week in looking for opportunities to make others feel good about themselves. Whether you compliment someoneâs choices or recognize their efforts, youâre sure to make a positive impact on their day. A FEW MORE THINGS...
