Our lovely neighbor Sharon brought a loaf of this gluten free pumpkin bread over for us a couple of years ago, and within an hour, my son Kell (who has celiac disease) had polished off the entire thing. It was a ringing endorsement if I’ve ever seen one, so I asked Sharon for the recipe and it's been a fall favorite of ours ever since. This gluten free pumpkin bread is moist, flavorful, and the texture is just right, so go ahead and give it a try, whether for yourself or for a loved one who can’t eat gluten. The recipe makes two loaves, so you could give one away, freeze one for later, or keep both to yourself! Here’s how to make it: Start by greasing two loaf pans (about 9” x 5”) with butter or cooking spray. Then to the bowl of a stand mixer or to a mixing bowl, add 2 1/2 cups of brown rice flour, 1/2 cup of cornstarch, 5 teaspoons of cinnamon, 2 teaspoons of baking soda, and 1 teaspoon of xanthan gum. Stir until the dry ingredients are well combined. Turn your mixer on low speed and add the following ingredients to the dry mixture one at a time: 4 eggs, 1 cup of vegetable oil, 1 cup of brown sugar, 2 cups of white sugar, 1/2 cup of lemon juice, and 15 ounces of pumpkin purée. Increase the mixer to high speed and continue mixing for 2-3 minutes. Divide the prepared batter between the two greased loaf pans, then bake them at 300°F for about 1 hour 20 minutes, or until a toothpick inserted near the center of a loaf comes out clean. Cool the finished loaves in the pans for about 10 minutes, then turn them out onto a rack and allow them to cool to room temperature before slicing. I think I must have watched it shortly after it came out in 1993, but I do remember laughing so hard that I had actual tears running down my cheeks. Based on The Witches by Roald Dahl (one of my favorite authors from my childhood), Hocus Pocus tells the story of a teenager named Max who inadvertently resurrects a trio of evil witch sisters (Bette Midler, Sarah Jessica Parker, and Kathy Najimy), who then must risk his life to protect his sister and defeat the witches. Of course, Hocus Pocus is as beloved as it is largely because of the actresses who play the witches. Bette Midler is my favorite as Winifred, the de facto leader of the Sanderson sisters—she plays the grouchy alpha witch to perfection, with memorable lines like, “Oh look, another glorious morning. Makes me sick!” And I was very excited to learn that Disney is currently working on a sequel for their Disney+ streaming service!
