If you saw my Instagram stories the past few days then you know I made a batch of naan for my Curried Chickpeas Meal Prep this week. [Curried Chickpeas with Spinach]() is one of my favorite fast and delicious budget meals because it has so few ingredients but is so very yummy. Like, lick the spoon yummy. Roasting cauliflower is, IMHO, one of the best ways to prepare this vegetable. I love [garlic parmesan roasted cauliflower](=), but sometimes I need to switch it up, so today I made Curry Roasted Cauliflower. [[Read More]()] --------------------------------------------------------------- [Curried Chickpeas with Spinach]() When I finished cooking these Curried Chickpeas with Spinach I took a look at my notepad to make sure I had written down all the ingredients. I looked it over a good three or four times thinking that I had surely forgotten something. The list was just too short. How did I just make so much yum with so few ingredients?! [[Read More]()] --------------------------------------------------------------- Until next time!
