I'm finally (mostly) settled in my new home in Nashville and was able to get back into the kitchen this week. Here's what I was up to... [Smoky Quinoa and Black Bean Salad]( Hi guys! I’m back (finally)! I didn’t expect to take so much time off of work, but as with any relocation, things didn’t go quite as planned. :) But we’re mostly settled into our new home in Nashville, and if you follow me on Instagram then you have probably seen my adventures in exploring new grocery stores. I hit up Kroger and Aldi today and yesterday, and got a bunch of staples to restock my fridge, plus a few items to make this super scrumptious Smoky Quinoa and Black Bean Salad. I’m still trying to find the “good light” in my new house for food photos, but we’ll figure it out. That won’t stop me from cooking! If you saw my Instagram stories the past few days then you know I made a batch of naan for my Curried Chickpeas Meal Prep this week. [Curried Chickpeas with Spinach]() is one of my favorite fast and delicious budget meals because it has so few ingredients but is so very yummy. Like, lick the spoon yummy. I paired the curried chick peas with some [Curry Roasted Cauliflower](), and a little bit of [Homemade Naan]() for sopping up the delicious curry tomato sauce. It’s a rare occasion when the price of cauliflower is what I consider to be reasonable, so when it happens, I take advantage. Roasting cauliflower is, IMHO, one of the best ways to prepare this vegetable. I love [garlic parmesan roasted cauliflower](=), but sometimes I need to switch it up, so today I made Curry Roasted Cauliflower.
