Hello! Here is what is new on Budget Bytes since the last time we visited: [Easy Broccoli Cheddar Soup](=) If ever there was a meal-worthy soup, it would be Broccoli Cheddar! This bowl full of colorful, chunky vegetables and a super thick cheesy “broth” are sure to leave you warm, happy, and satisfied. Unlike some broccoli cheddar soups, my Broccoli Cheddar Soup doesn’t use heavy cream and is ever so slightly lighter on the cheese, so you still get all that creamy, cheesy goodness without feeling totally weighed down. But, you can always add more cheese if you’d like. #norules This soup is so dang easy I’m sure it’s going to go into my regular rotation! Plus, I’ll share several different ways you can serve or customize these eggs so you’ll have plenty of options! And then the supply and demand got all out of whack and cauliflower was suddenly more than $5 per head?? Well, I’m glad that the supply has finally caught up with the demand and I can buy cauliflower for a reasonable price again. 😅 Because it really is a super versatile vegetable and you can use it in place of so many different things, but I love just roasting it up, as simple as can be, with a little garlic and Parmesan. This Garlic Parmesan Roasted Cauliflower makes a great side dish to go with dinner, or even a snack with a little Comeback Sauce for dipping. Any way you eat it, it’s gooooood.
