Hey friends! Here's what I've been cooking up this week. [Chimichurri Chickpea Salad](=) = We’re still experiencing a lot of grocery shortages in the middle of this pandemic, but when I ventured out to the grocery store this week I noticed something. The produce department was very well stocked, while many of the shelf stable items were sold out. I presume that’s because people are afraid to buy perishables. So, that made me rethink my strategy. I’m going to focus on fresh ingredients for about a week after shopping, then transition into the more shelf stable recipes (like my [15 Pantry Staple Recipes](=)) for the second week, or until my next grocery run. Besides, after eating so many pantry recipes over the past month, I’m craving fresh produce hard. So this week I grabbed some fresh parsley, cilantro, and a pint of tomatoes, and whipped up this SUPER easy Chimichurri Chickpea Salad.…Because [chimichurri is good on anything and everything](). ;) [[Read more...](=)] --------------------------------------------------------------- [Easy No-Yeast Pizza Dough](=) = Desperate times call for desperate measures. There’s nothing quite like a perfectly light, chewy, and crispy traditional pizza crust made with yeast, but right now we have to make do with what we’ve got and for many, yeast is hard to come by! And I don’t know about you, but I’m definitely not going to give up my beloved pizza just because I can’t find any yeast at the store. 😅So for the time being I’m making this super fast and easy No-Yeast Pizza Dough to get my fix. Make sure you scroll down and read about the differences between yeast and no-yeast dough to get a better idea if this type of dough will work for you! That way you get the *perfect* chip-to-topping ratio in every bite. 😋 [[Read more...](=)] --------------------------------------------------------------- [Bacon & Spinach Pasta with Parmesan]( Super simple pastas are my jam! This one uses the power of a little bit of bacon to make it totally [#extra]( [[Read more...](] --------------------------------------------------------------- [Apple Dijon Kale Salad]( Kale is a great vegetable option when you can’t get to the store often. It holds up longer in the fridge than more delicate greens, it’s good for both fresh salads and cooked in dishes, and you can freeze it for later (use kale that has been frozen for soups, smoothies, and for sautéing). This Apple Dijon Kale Salad is one of my most favorite salads EVER. It has a tangy homemade vinaigrette, crunchy walnuts, sweet raisins, and juicy apple slices. You’ve got to try it! [[Read more...](] Until next time, happy cooking! P.S.
