It’s a fantastic goal and one I get behind anytime of year, but there’s definitely a learning curve! I’m sure we’ve all had this experience: ambitiously buying a shopping cart full of vegetables at the beginning of the week, only to let half (if not all) of them wilt in the fridge by Friday. Having your vegetables end up in the garbage is practically the same as throwing your money away (except more smelly), so I wanted to round up six easy ways to use leftover vegetables, that anyone can do and with very little planning. If I’m already going through a lot of trouble to make a main dish, I’m not going to pull out ten more ingredients just for the supporting actor. No, side dishes are to remain as simple as they come! If you like tomato soup, you’ll adore Swamp Soup. It’s like tomato soup on steroids and with a grilled cheese built right in. The broth is incredibly thick and hearty, it’s full of tons of vegetables that add texture and flavor, and let’s not forget those creamy, gooey bits of swiss cheese in every other bite. As I sat there hungrily devouring one of these BBQ Bean Sliders, beans were falling out of the bun and BBQ sauce was getting all over my hands and face. That’s when it hit me—this would have been much better as a wrap sandwich. But then again, sometimes the messier the food the better.
