Here is what was new on Budget Bytes last week: [Sweet Potato Taco Meal Prep](=)= It’s meal prep time! I’m sorry I didn’t get this post up on Sunday, but a day late is better than never! :) This week I remade and old recipe that I love, [Sweet Potato Tacos](), and built my meal prep around that. I also added some [Taco Rice]( to bulk it out, and some leftover frozen corn that was stashed in the freezer and needed to be used up. I’ve pictured the Sweet Potato Taco Meal Prep two ways below so you can see it both assembled and how you should actually pack them to maintain the best quality. [[Read More](=)] --------------------------------------------------------------- [Coconut Curry Hummus]( Every now and then I like splurging on “fun foods” to explore new flavors and get a little inspiration. My last little splurge was some Thai curry hummus that was on sale at Whole Foods. I loved the unique combination of lime, coconut, and Thai curry paste with the usual hummus flavors and I immediately thought, “I must try to make this at home!” Well, I don’t have any Thai curry paste right now, but I do happen to have curry powder, which is actually quite different from Thai curry paste, but equally delicious with coconut and chickpeas. I’ve used curry powder and coconut together in several [dishes](=) in the past, so I knew the flavors would still work well. I decided to give it a whirl, and I have to say, I’m in love with this rich Coconut Curry Hummus. [[Read More](] --------------------------------------------------------------- [Herb Butter Chicken Thighs]( When I need a fast no-brainer meal, it’s all about a quick skillet-cooked chicken and pan sauce. Those rich flavorful pan sauces are absolute heaven and can be spooned over rice, tossed with sautéed vegetables, or even drizzled over a small pasta, like orzo. This time I used a pre-mixed Italian herb blend to make this rich and buttery herb pan sauce, which was so good that I wanted to just sit there with a chunk of bread to sop it all up. It’s quick, uses a lot of fresh ingredients, is very filling, and flavorful. This pasta packs protein (white beans and parmesan), veggies (tomatoes and spinach), and carbohydrates (pasta), making it a great one-dish meal. You can serve it up as is for a lighter main dish, or add some sliced grilled chicken to make it a bit more filling.
