Hi Beyond Diet Reader, It's that time of year again when you're going to hear the dreaded question: "Would you like to buy some Girl Scout cookies?" Now, no offense to the amazing Girl Scout Association, but what are these adorable girls thinking when tempting so many of us with these irresistible cookies when we're so desperately trying to keep our weight goals?! The Girl Scout program is an amazing one that helps girls build confidence and character, which I fully support. However, when you take a look at one of these cookie boxes, you'll see that what's inside is a little scary: soybean oil, defatted soy flour, high fructose corn syrup, artificial flavoring, and some cookies containing as much as 16 grams of sugar per serving (that's 4 teaspoons!). So, in order to still satisfy the craving of Girl Scout cookies, without the artificial stuff, try my delicious recipe below: 36 servings, .33 Protein / 0 Fat / .33 Carb - 3 cups almond flour - 4 tbsp cacao powder - 1/8 tsp sea salt - 1/2 tsp baking soda - 1/3 cup raw honey - 2 tbsp coconut oil, melted - 1 egg - 2 cups dark chocolate chips - 1 cup canned coconut milk - 1/2 tsp mint extract Preheat oven to 350° F. Line a baking sheet with parchment paper. Combine almond flour, cacao powder, sea salt, and baking soda in a large bowl. In a seperate bowl, combine honey and melted coconut oil. Whisk in egg and 1/2 teaspoon mint extract. Add wet ingredients to dry ingredients, and stir until well combined. Make cookie dough balls of about 1 teaspoon. Arrange on baking sheet. Cut squares of parchment paper to place on top of each ball, and use a glass to press down and flatten the cookies into "thin" mints. Bake for 11-13 minutes. Remove from oven, and let sit for at least 15 minutes to harden and cool. Make the frosting; use a double-boiler to melt the chocolate chips. When they are completely melted, stir in coconut milk and 1/2 teaspoon mint extract. Place the hardened, cooled cookies in the frosting one at a time. Use forks to flip and drain the cookies over the bowl of frosting. Arrange the cookies on parchment paper. Place the cookies in the refrigerator and let cool for at least 1 hour. Store in the fridge in an air-tight container. Enjoy!
