This lesson focuses on varying hydration, shaping doughs into classic shapes (including boules and batards), and how to score a loaf. Barney also talks about adding different flavours and grains and how doing so will change the outcome of your bake. 4. Beyond loaves and theory. Lastly, Barney takes us through other uses for sourdough, including pizza bases and flatbreads. He also touches on sourdough leftovers and what to do with stale bread.
