As with every project we work on, I am always amazed by how much we learn along the way. I’ll leave most of our discoveries to the pages of the cookbook, but I will say that this particular project gave us a unique opportunity to explore the various styles of skillets—from the iconic [multi-clad stainless-steel skillet]( to the trendy [ceramic nonstick]( re-evaluate our personal preferences across cooking techniques and recipe types. What I found most surprising from this experience is that at the end of the day, I was reaching for the carbon-steel skillet almost exclusively. I, as I’m sure like many of you, have been keeping tabs on the [carbon-steel skillet]( as Lisa McManus has been providing reviews, but I have always been left with the question: “Do I really need to buy another skillet?” The short answer is—YES! And here is my case to you: 1. Frankly, the one pan replaces them all. Because of its composition, it’s heavy enough to retain heat well, like cast-iron, but thin enough to heat quickly and evenly, like stainless steel. I would not be surprised if, as my other skillets deteriorate, the carbon-steel is the last skillet standing. Plus, (and this is a big one)— 2. It’s naturally nonstick. Once you have built up and are [maintaining a proper seasoning]( it is as slick as a fresh nonstick skillet but performs far better. 3. Finally, I appreciate a well-crafted kitchen tool and the patina on the carbon-steel skillet is really impressive. I found myself wanting to show it off as much as possible. I regularly used it as a serving vessel at the table for one-pan meals or a show-stopping seared steak or fillet. All this to say, if you have been on the fence about buying a carbon-steel skillet, you won’t be disappointed when you do.
