This limits the amount of time that I have to prepare healthy, wholesome and satisfying weeknight dinners, so being strategic and planning ahead is more important than ever! My goal is to spend no more than 45 minutes on dinner each night, so I choose a smart balance of recipes that I can either fully prepare in advance and simply reheat, such as [Sweet Potato Soup]( [White Chicken Chili]( and [Braised New Mexico-Style Pork in Red Chile Sauce (Carne Adovada)]( or recipes that I can mostly prep in advance and cook when I get home, such as [Cast Iron Chicken Pot Pie]( [Chraime]( and [Cheeseburger Mac](. Other recipes are a snap to prepare from start to finish in this allotted time, such as [Pasta e Piselli (Pasta and Peas)]( [Pan-Seared Salmon]( and [Perfect Fried Eggs](. Bonus tip: I like to double-batch these recipes whenever possible so that I have an extra meal to pop in the freezer or to enjoy again later in the week. The first step in planning our daily meals is to map out the menu for the week. First, I create a schedule, and then I create a prep list for what I need to do in advance and what will need to happen each night. Creating these lists is the key to my success and ensures that Iâm prepared for a smooth and efficient week. Some meals that I prepare are simple and can benefit from a flavor boost, so I like to stock my refrigerator with bold-flavored condiments such as [Maple Chile Crisp]( and [Pomegranate-Balsamic Glaze](. I also try to stock my freezer with a variety of pestos and spreads that can be stirred into pastas or served along with simple roasts, eggs, etc. Two of my favorite recipes are [Arugula and Almond Pesto]( and [Green Olive Tapenade](. To make storage easy and accessible I portion them into ice cube trays and freeze until needed. Finally, I make sure that my freezer is always stocked with items that can be defrosted and heated and served last minute to bulk up our meals, such as bags of cooked rice, scones, biscuits, dinner rolls, tortillas, etc. I hope this helps others who face similar meal time challenges!
