You deserve to relax, so this week weâre providing a stress-free, practically hands-off solution for your menu. Enter the humble slow cooker. Simply prepare your ingredients, place them in the slow cooker, and let your dinner simmer on its own. Our featured recipes give you all the tools you need for a stellar taco night. Crispy yet tender, [carnitas are the ultimate taco filling](. We cut pork shoulder into chunks and combine the meat with onion, orange zest and juice, lime zest and juice, garlic, ground cumin, oregano, and hefty amounts of salt and pepper. As the meat cooks on low in the slow cooker, it releases just the right amount of liquid to help it braise and become pull-apart tender. To get the dishâs characteristic crispiness, we mash the pork pieces and add them to a hot skillet along with some of the intensely flavorful juices, cooking the mixture until the pork fries and turns crispy.

[Simple and fresh fish tacos combine tender fish]( crisp sliced cabbage, and a tangy sauce. We recommend mild but sturdy halibut fillets as theyâll turn out moist and flaky in the slow cooker. We coat the fillets with a spice rub, place them on a bed of sliced limes, and add just enough water to steam the fish. Light mayonnaise and low-fat sour cream act as the base for a smoky, tangy sauce featuring lime juice and chipotle chiles. Cabbage salad mixed with fresh cilantro, scallions, and lime juice adds a crunch thatâs the perfect finishing touch.
