We had blown through the last of the salted shrimp in the glove box just outside of Las Cruces and were now incredibly thirsty. To be honest, none of us were truly hungry, but car snacks are an important marker for passing time on the road, especially in the desert. We’d eaten green chile cheeseburgers all morning, and our next stop was barbecue. Big, beefy barbecue. Beef ribs the size of your arm, perfumed with the aroma of post oak and pepper, as tender as a ripe tomato. This is my life. It’s been pretty amazing traveling across the country for the last 10 years, eating and meeting the best chefs, home cooks, pitmasters, fishmongers, farmers, bakers, charcutiers, and all manner of food folk. During that time, I’ve written quite a few [articles]( and developed as many recipes, documenting my experiences and meals.
