It’s a bittersweet time for me. I’ll be cutting down the amount of time I spend outside with my offset smoker, but I’ll keep the low-and-slow cooking mantra going inside—it’s the start of braising season, after all. Braising is a great way to cook. Most of the work is front-loaded, and once the big old [Dutch oven]( (or any pot you choose) goes into the actual oven, you’re looking at a couple of hours to work on the other parts of the meal. Or watch the game. Or have a glass of wine. Your choice. I made a batch of these [incredible chicken thighs]( early last spring, and I’ve missed them ever since. So that’s a great place to start. This recipe for [steak and ale pie]( is a Sunday favorite. The beef filling is somewhere between a braise and a stew (a brew?) and it’s topped with a sturdy, flaky crust. I have to make them two-at-a-time just to ensure leftovers. Poultry or other meats aren’t the only things that can benefit from braising—albeit the methods may vary. I grew up eating [soft, silky, and super-tender collard greens]( and a long, slow simmer with smoky hocks is the way to go. And . . . since we’re in high cabbage season, I’ll put this recipe for [cavolo verza]( on the menu. Leave it to the Italians to make me crave cabbage. Or, perhaps you’re feeling like something a little starchier? How about these [little red potatoes]( Their interiors are ultracreamy, their exteriors get a little freckled from browning, and the flavors are vibrant. Can’t go wrong there. I try to pre-test any new recipes that I might serve on Thanksgiving. So, I made this new recipe for braised [turkey thighs and drumsticks]( last weekend. The meat was beautifully tender and juicy, but oh, that gravy! Forget Thanksgiving—this recipe should be made more than once a year.
