I used my large roasting pan (as directed in the recipe) and served this symphony of rice, shrimp, clams, chicken, and chorizo with a glorious salad from my garden. Nothing else needed. Erin McMurrer’s [Israeli Couscous with Lemon, Mint, Peas, Feta, and Pickled Shallots]( was the side-dish star at the dinner party with those short ribs. It’s also been a big hit with our youngest (and vegetarian) daughter and her friends. I’ve been using fresh garden peas (although frozen, as directed in the recipe, are fine) and haven’t bothered to cook them. Toss the peas with the just-cooked couscous and let the residual heat gently soften them. Don’t forget dessert. I never do!
