My wife and I hosted the perfect dinner party last month. Want to look like a hero without doing much work? Make Lan Lam’s [Grilled Boneless Beef Short Ribs](. And make the suggested [Preserved Lemon–Almond Sauce]( a no-cook accompaniment that’s bright and bold. Want to impress your guests? My in-laws visited a few weeks ago and I made [Paella on the Grill]( (another recipe developed by my friend Lan). It’s not as dead simple as the short ribs, but it’s so much fun. I used my large roasting pan (as directed in the recipe) and served this symphony of rice, shrimp, clams, chicken, and chorizo with a glorious salad from my garden. Nothing else needed. Erin McMurrer’s [Israeli Couscous with Lemon, Mint, Peas, Feta, and Pickled Shallots]( was the side-dish star at the dinner party with those short ribs. It’s also been a big hit with our youngest (and vegetarian) daughter and her friends. I’ve been using fresh garden peas (although frozen, as directed in the recipe, are fine) and haven’t bothered to cook them. Toss the peas with the just-cooked couscous and let the residual heat gently soften them. Don’t forget dessert. I never do! Keep it simple and dress up store-bought ice cream with homemade cookies—[Soft and Chewy Molasses Spice Cookies]( and coffee ice cream are perfect for a grown-up evening. For something kid-friendly, make a no-bake icebox cake. [Chocolate Eclair Cake]( is Cook’s Country’s most popular dessert of all time and with good reason. It’s summer, so celebrate by having friends and family over and making something simple but memorable. Members get every recipe, review, and video.
