But in these lazy, hazy days, I’ve found that I don’t have to do much to make it happy. A scoop of lemony sorbet here, a juicy peach there. If I can muster the motivation to roll up my sleeves and make a dessert, I’m keeping it simple and light. The ringer? [Lemon Bisque](. It sounds fancy, but it’s a pantry-ingredient surprise. My mom made Lemon Bisque for my sister and me multiple times every summer of my childhood. You achieve the light, cloud-like texture by whipping a chilled can of evaporated milk with gelatin and lemon juice. Graham cracker crumbs add a little texture and sweetness. It’s easy, unpretentious, and thoroughly delightful. Seasonal fruit is such a gift, it’s hard to think of turning on the oven to do anything to it. That’s why this recipe for [Nectarines and Berries with Prosecco]( is so appealing to me. The key is macerating the fresh fruit with a little sugar to create a light syrup and soften the fruit before letting it swim in some bubbly prosecco. Or throw some [ripe stone fruit on the grill]( for just a kiss of heat. The natural sugars caramelize (with a little help from melted butter), and you can serve the fruit with ice cream and a [crisp almond topping]( or a [handful of granola](. For a creamy, fruity treat with curb appeal, make a quick, mostly homemade batch of [Mini Cookie and Berry Trifles](. Start with some sweetened mascarpone cheese lightened with whipped cream and layer it with fresh berries and crushed cookies such as vanilla wafers or graham crackers. This recipe may have been developed with kids in mind, but it’s a great recipe for adults who’d rather spend hours on a hot summer day at the pool than in the kitchen making the components of a trifle from scratch. And finally, let’s talk bananas. I’m picky about bananas and only enjoy eating them when they’re barely ripe and still ever-so-slightly green, so my freezer is filled with brown-speckled bananas that missed the cut.
