I was hired during the winter. We had lots of fresh citrus. We had potatoes. We always had top quality salad greens. But when the weather warmed up and the Red Sox season kicked off, the restaurant’s walk-in filled up with beautiful, vibrant produce that was only in season for a short time. I worked garde manger—a mostly cold station responsible for chilled appetizers and salads—and I took real delight in working with that produce. I roasted purple and yellow beets for a salad with crumbled blue cheese and mixed greens. I sliced watermelon radishes and tender bulbs of fennel for salads with goat’s-milk gouda scattered over the top. I learned to combine snap peas and snow peas with ricotta salata in a creamy salad that I still make to this day. These days, I’m thrilled that I’m cooking for two instead of pumping out hundreds of covers. But I still remember what the chef taught me about taking care of that produce.
