Now when I host a barbecue, I am strategic about what sides and snacks I can make ahead so that on the day of I can focus on the charcoal. And while I love burgers, coleslaw and potato salad as much as the next girl, I try to play with different twists or surprising spins—sometimes because they would hold a little better at room temperature and sometimes just because it’s fun to give your guests something they haven’t had before. I usually measure out my dry ingredients the night before then bake off the biscuits before I fire up the grill so they’re waiting on the table as the first people walk into my backyard. And for each of these I can make the dressing and cut up the fruit or vegetables in advance and just assemble when guests arrive.
