“Grate” Cheese Tools [SEE EQUIPMENT GUIDE]( [Kate Shannon, Deputy Editor, ATK Reviews] A few weeks ago, I arranged 17 different cheeses in the ATK Reviews lab and put out a call to my coworkers: Come taste! In some ways, it was a normal day in the test kitchen. But it was also a first. All 17 of those cheeses were made with sheepâs milk. Weâd written about some cheeses in that categoryâ[Pecorino Romano]( [feta]( we had never done a deep dive into the category.
The cheeses came from all over the world, from a little town in Wisconsin to a tiny island off the coast of Croatia. Some were firm and crumbly. Many were rich and creamy. Two were so soft that instead of cutting them into wedges, I sliced off their tops and told people to scoop out a sample with a spoon. I compiled the tasting panelâs notes and spent the next few weeks interviewing dairy scientists, cheesemakers, and experts on sheep. The results of all that work?
