Should You Buy a Sauté Pan? [Carolyn Grillo. Senior Editor, ATK Reviews] I love [my skillet]( just as much as the next cook, but I might love [my sauté pan]( more. Hereâs why: It has the same broad cooking surface of a skillet but with the added benefit of moderately high L-shaped walls. These walls are high enough for corralling cooking splatters and stirring without spilling, but are short enough for me to reach in easily with a spoon or tongs to stir or flip food. This panâs mess containment is a big selling point for people like me who appreciate an easy cleanup after dinner.
I use this versatile pan for several dishes including [cooking down large amounts of spinach, kale, or escarole]( shallow frying chicken cutlets before making chicken parmesan; [sautéing meatballs]( and more. Like a good skillet, a great sauté pan is made from fully clad stainless steel, which conducts and maintains heat well. Itâs also good for developing fond, the flavorful bits of food left behind after browning that serve as the base for pan sauces. A Sauté Pan
This pan wowed our cooks from the very start of testing. It browned food evenly on the stovetop and produced fluffy rice in the oven. Its broad cooking surface provided plenty of room to brown meatballs and accommodated 1 pound of raw spinach. Its walls were high enough that we didnât lose any food when stirring but low enough that it was easy to reach inside with tongs to flip food.
