These were: - Béchamel: the milk-based white sauce that is the basis for many mac and cheese recipes
- Velouté: a blonde sauce with butter, flour, and broth
- Sauce Espagnole: a rich brown sauce that gave way to bourguignon
- Sauce Tomate: related to Italian tomato sauce and Southern tomato gravy

Nowadays, I donât stick to classic French sauces, but I do lean heavily on sauces to take a dish from good to great. A stir-together [yogurt sauce]( or a [briny herb-based sauce]( can be drizzled over roasted chicken or charred vegetables for much more complexity. After searing a steak, I love deglazing a pan with red wine, broth, herbs, and butter for a [quick pan sauce]( that feels worthy of a steak house. And I keep vinaigrette in my fridge to toss with salad greens or even drizzle over pork chops for a fresh, vibrant pop.
