No matter the time of day, breakfast doesn’t always equal the basics like scrambled eggs, bacon, and toast (although that’s a right dandy breakfast.) Here are some easy ways to elevate your breakfast game. Let’s start with eggs. If you’re looking for something beyond a basic scramble, how about [this elegant version]( that’s beautiful served over a thick slice of toasted sourdough? Or this tangy and creamy [çılbır]( which showcases poached eggs? Perfect as-is in the morning, or great with a salad later on in the day. If you’re looking to cook eggs for a crowd, I can highly recommend this [spinach frittata]( which uses a breakfast cook’s best friend—the [cast-iron skillet](. The basic skillets are inexpensive—I keep a few sizes on hand—but the [enameled cast-iron pans]( while more expensive, are pretty enough to serve on a fancier brunch table. Speaking of fancy, this [French toast casserole]( has been in regular rotation in my house for a while—in no small part because it can be assembled almost entirely in the [baking dish]( the night before. Same goes for this [sausage and mushroom strata]( which might be one of my favorite breakfast-for-dinner meals and is perfect with a glass of white wine. Finally, if you’re looking to take that breakfast “to go,” then a sandwich is called for, and these [breakfast burritos]( which feature two of my favorite foods—chorizo and tater tots—are as hearty as they get. You can even slip some roasted red peppers or charred chiles in there if you’re missing vegetables. Or you can whip up a batch of these [breakfast sandwiches]( which are sort of a take on a BLT.
