Our version of this Palestinian dish keeps its traditional elements intact while providing store-bought substitutes and adaptations for the home kitchen when needed. To find a substitute for the taboon bread, we opted for supermarket naan. To cut down on cooking time, we relied on chicken pieces, which we cooked atop a layer of chopped onions and spices. Since this dish is traditionally eaten with the hands, we crisped the naan under the broiler before piling on the onion mixture and chicken to prevent sogginess.

This soup evolved to combine the flavors of New Orleansâ once bustling Chinatown with its Creole spices and soul food. We brown the beef chuck-eye roast before adding and sautéing the âholy trinityâ of aromaticsâonion, bell pepper, and celeryâto create a flavorful fond. Slowly simmering the roast in beef broth until itâs meltingly tender creates a concentrated soup stock, which we season with Creole spices, soy sauce, garlic, and monosodium glutamate. Cauliflower Pasta with Browned-Butter Sage Sauce
Waste not, want not with this decadent but simple-to-make recipe. Bolster the butter-based sauce with pasta water instead of draining away the cooking liquid. Use both the zest and juice of the lemon to add a floral, citrusy kick. And garnish the pasta with the fried sage leaves used to flavor the sauce. With just a few ingredients, thoughtfully used, this pasta packs a punch and showcases the nutty flavor of that cool-weather staple, cauliflower.

Savory scones are just as fun to bakeâand eat!âas their sweet counterparts. For light and flaky scones, we treated the butter in two stages. First, we processed half the butter until it was fully incorporated into the dough. Next we added the remaining butter and extra-sharp cheddar cheese together and pulsed them until pea-sized clumps remained, which would create pockets of steam as the scones baked. A touch of sugar in the dough balanced the salty cheese and helped with browning to ensure a crisp exterior.

Cornstarch, butter, and egg yolks are the keys to the crumbly, melt-in-your-mouth texture of these iconic Latin American cookies, often filled with the regionâs caramelized milk jam, dulce de leche. Using slightly more cornstarch than flour, plenty of butter, and egg yolks instead of whole eggs yielded delicate cookies. Our favorite oat milk had âmild oatâ flavor and a âvery faint nuttiness.â With only 7 grams of sugar per serving, it was ânot too sweet.â Our testers called it âsupersmooth in coffee,â partly because of the addition of rapeseed oil, gellan gum, and phosphates. When subbed in for coconut milk in vegan biscuits, it produced tender, delicious results.
