It feels good to stay home and cook smaller, easier, and more wholesome meals. My favorite recipes for this time of year are very Mediterranean-like, with whole grains, lots of vegetables, and bright flavors. Here are a few of my go-tos: [Hearty White Bean Soup →]( I love making a big batch of this soup because the leftovers taste terrific, and it freezes like a dream. I always serve it with a big hunk of crusty bread and a wedge of good cheese. [One-Pan Baked Quinoa with Kale and Chickpeas →]( I remember when we developed this recipe back in 2009 for the big, green, ring-bound ATK Healthy Family Cookbook. It’s a staple recipe at our house (because it’s so hands-off!) and once you get the hang of the cooking method, you can swap in other vegetables and flavors to suit your tastes or whatever you have in the fridge. [Quick Collard Greens with Hot Pepper Vinegar →]( This recipe brings the house down every time, in part because it breaks from the tradition of simmering the collards for hours in pot liquor. This recipe quickly blanches the greens in boiling water, then squeezes them dry before sauteing them with some bacon. And serving them with the pepper vinegar is key—I’ve actually seen brands of pepper vinegar at the store but making it yourself is supereasy. Also, do yourself a flavor and just double the recipe—I promise there won’t be a scrap left over. [Roasted Beets with Lemon-Tahini Dressing →]( This is a newer recipe from Cook’s Country and it is incredible. The cooking method for the beets ensures that they actually take on a roasted color and flavor (other recipes I’ve tried wind up just steaming the beets in the oven). Also, I love the combination of sesame and beets—plus the finished dish is a real looker. Serve with a small salad and some rice, and it’s a satisfying vegetarian meal. [Vegan Freekeh Salad with Butternut Squash, Walnuts, and Raisins →]( I’m usually not a fan of raisins in salads, but they are good here with the walnuts and butternut squash. The earthy flavor and toothsome texture of freekeh is worth the search, but other grains—such as farro or quinoa—make for great substitutes. This recipe also holds well in the fridge for a few days and is a solid leftover lunch. P.S.
