For the newbies receiving this email, in 1992 we started out doing one thing—making Cook’s Illustrated magazine. Each time the ATK team has tried something new, it’s been both exhilarating and terrifying. Will this project meet our high standards? Will our audience like it? Eleven home cooks from around the country compete in culinary and media challenges to see who has the chops to join the ATK team. Dan, Elle, Julia, and I are joined by well-known chefs as judges. [Jeannie Mai Jenkins is our talented host]( and new BFF to the ATK team. Now, I know what some of you are thinking. Why on earth is ATK doing a culinary competition? I promise you the show is very much “on brand.” • More than 800 home cooks answered our casting call. I personally put many of the finalists through a rapid-fire test of their culinary knowledge (this was done over Zoom and, evidently, it was terrifying). But we wanted [contestants]( who knew the difference between baking powder and baking soda, as well as the correct internal temperature for cooking medium-rare salmon. • Fans love America’s Test Kitchen and Cook’s Country for our quick-witted, genuine nature. We respect and root for each other and for America’s home cooks. That’s our DNA. You’ll find that same respect and support, coupled with a live learning environment in ATK: The Next Generation—this time with a little more cooking chaos and tears of joy than usual. After all, there’s a life-changing job on the line. • Listening to Dan, Julia, and Elle assess the food prepared by contestants is fascinating. They diagnose what went well and what didn’t. For example, Dan looks at a piece of salmon [in episode 1]( and tells the contestant that he knows the fish is overcooked just by looking at it because so much albumen (that white gunk) has been pushed out. There’s a lot to learn from imperfect food, and I suspect you will find the judges’ comments candid and insightful–critiquing the ATK way. See for yourself.
