Precooked fillings also sometimes dry out during the fry process, resulting in crumblier, less cohesive lumpia. [Vegan Chocolate Mousse]( From Cook’s Illustrated Magazine Vegan Chocolate Mousse Using aquafaba, the viscous liquid found in canned chickpeas, instead of dairy and eggs, you can make a gossamer-light mousse with a profound chocolate flavor in minutes. Aquafaba whips into a stiff, snowy-white foam just like egg whites. Adding vegetable oil to the chocolate base contributes richness and, unlike the coconut oil often found in vegan mousse, doesn’t give the dessert a grainy mouthfeel. For deep, complex chocolate flavor, use both solid chocolate and cocoa powder. Without the dulling effects of dairy, every nuance of chocolate flavor shines through. NOTES FROM THE TEST KITCHEN Don’t Assume All Dark Chocolate Is Vegan You may not realize it without examining the label, but some dark chocolates contain small amounts of milk products such as whey, casein, or milk solids. Furthermore, they may be sweetened with conventional granulated sugar, which is sometimes processed with bone char.
