Make Way-Ahead Dinner Rolls
âI believe in the power of fresh bread . . . the puff of yeasty steam that rises as the delicately crisp crust is broken open; the way a swipe of butter melts and sinks into the feather crumb.â So writes Andrea Geary, long-time Cookâs Illustrated test cook and, clearly, a writer who loves bread. Her new brown-and-serve rolls recipe means youâll never be more than 15 minutes from the comforts of homemade bread (and an economical alternative to store-bought rolls). And Thanksgiving? Yes, definitely the time to debut these beauties. Make them now, freeze and then finish baking on the big day. [Icon]
Science
In addition to starting with a moist dough that could handle two stints in the oven without drying out, hereâs how we successfully divided baking the rolls into two stages:
Parbake in a low (300-degree) oven: [Parbaked roll]( When you bake rolls in one go, a moderately high oven (375 degrees or so) takes the dough from raw to fully expanded and set to browned. To ensure that the dough would fully bake but stop shy of browning, we turn the oven down to 300 degress—which is still plenty hot enough to increase the activity of the yeast so that the rolls would properly expand. We then remove the rolls just when their interiors are fully set (they register 175 degrees) and their exteriors are still pale.
Brown in a hot (475-degree) oven: [Browned roll]( We freeze the rolls, then place them in a hot oven just before serving, where they thaw and warm through as the crust turns a rich brown and develops lots of flavor compounds. [Icon]

Pennsylvania Dutch Apple Pie
The hallmark of Dutch apple pie is its creamy apple filling. Instead of adding the traditional cream, we soaked sliced apples in melted vanilla ice cream for extra creaminess and a rich vanilla flavor (the apples become pliable and pack easily into the shell). A sour cream-enhanced crust comes together quickly in a food processor and a mixture of melted butter, flour, brown sugar, and a good dose of salt makes a streusel crumble thatâs supremely buttery.
