In New England, that can last into October. But when the temperature starts to dip below 60 degrees, I start itching for soup. Nothing too heavy, mind you, just a warm way to transform the last of the summer vegetables and tiptoe into the fall harvest. That starts with the [Pennsylvania Dutch Chicken and Corn Soup]( I developed years ago. The smell of sweet corn and savory chicken is the most vivid sense memory for me; I feel like I’m a little girl again spending the weekend at my grandparents’ house in rural Pennsylvania. When I’ve eaten my last fresh tomato of the season, I’m ready to transition to [Classic Tomato Soup]( with crunchy croutons or a grilled cheese sandwich. I’m also a big fan of Andrea Geary’s [Broccoli-Cheese]( soup—it’s got big broccoli flavor but retains its bright green color thanks to the addition of some baby spinach. Both of these soups are pureed to a creamy, smooth texture. You can dust off your blender for that, or grab an [immersion blender]( like I do: It’s not as powerful as a traditional blender (the soup’s texture won’t be quite as smooth), but it’s a snap to clean and takes up far less room in my small kitchen. I’ve really been getting into cooking with beans lately, and soup is the perfect place to use them. I keep a stash of dried and canned beans at home so I’m ready for anything, from [Senate Navy Bean Soup]( that uses dried white beans, to [Red Lentil Soup with Warm Spices]( to a quick vegetarian bean chili I make by clearing the pantry of any canned beans I can find. In fact, here’s my confession: When it comes to soups, I often like to fly without a recipe. Soup is one of my favorite things to make because I can let my imagination (and the contents of my refrigerator and pantry) guide me. The key to making soup—with or without a recipe—is to keep your pantry primed with aromatics such as onions, shallots, and garlic as well as your go-to broths. If you make your own stock, even better.
