Core Technique Video
Puff pastry, which is the basis of the three recipes in this course, is created by the process of lamination. A relatively lean yeasted dough is wrapped around a block of butter and then the entire package is rolled out and folded repeatedly to form paper thin layers of dough separated by even thinner layers of butter. These layers bake up light and flaky. We demonstrate our failproof technique in the Basics of Lamination video.
