My answer is always the same: Add a quick pickle! Quick pickles are simply thinly sliced vegetables that have been immersed in a seasoned vinegar. Over time (anywhere from 10 minutes to 2 hours, depending on the vegetable) they absorb the tangy flavors of the vinegar. My go-to is pickled [red onions](. I’ve always got a jar of these vibrant pickles in my fridge. I use them in tacos, burgers, sandwiches, and salads. If you’re looking for something with varied textures and a little more flavor, you’ll want to try this [escabeche](. My colleague Steve Dunn originally developed this recipe for pickling carrots, onion, and jalapeño in a coriander-and-cumin-spiked vinegar to accompany his [Tinga de Pollo (Shredded Chicken Tacos)](. This escabeche also make a great accompaniment to grilled fish or barbecue pork. And I can’t talk about quick pickles with giving a shout-out to another colleague.
