At first I worked behind the counter, boxing up pastries, frothing milk for cappuccinos, and operating the cash register after school. But I was intrigued by the back kitchen. The early-morning bakers, the rising bread, the commercial ovens, the barrels of flour. At this point, I hadn’t done a whole lot of cooking or baking. But I asked the owner, a kind and experienced baker named Bill, if I could give it a try, and he said yes. He trained me in measuring, timing, mixing, baking bread, and even decorating cakes. I wasn’t always amazing at it, but I had fun. I had no idea there was so much math, science, history, and culture involved in . . . a loaf of bread or a summer fruit tart. I spent a summer arriving to work at 2 a.m. and coming home, bleary-eyed and ready for a nap, at 10 a.m. I was 16 years old and suddenly superinterested in food. I lived at home and didn’t need to cook for myself. I kind of wanted to cook for my family (though, you know, 16-year-olds and family . . . ) and definitely for my friends. But mainly I wanted to explore recipes and see what was possible. Working in the bakery mainly made me realize how much I didn’t know about food and how much I wanted to learn. I’ve been thinking about that 16-year-old a lot lately. Now, I’m editor in chief of America’s Test Kitchen Kids, and our newest cookbook is for TEEN CHEFS.
