This deeply flavorful dish has skyrocketed in popularity since its invention in the 1980s. Started by Paul Prudhomme and his wife, K. Hinrichs, at their acclaimed K-Paulâs Louisiana Kitchen in New Orleans, the blackening method is a surefire way to bring out âthe ultimate taste.â Using a cast-iron skillet, butter, and some traditional blackening seasonings (paprika, garlic and onion powder, and more), this smoky recipe boasts a boundary-pushing savoriness that will have you hopping right on the blackening bandwagon.

Egg, Kimchi, and Avocado Sandwiches
For an egg sandwich with tender, creamy eggs that stayed put inside the bread, we skipped frying and scrambling. Inspired by a recipe from restaurateur and cookbook author Joanne Chang, we used a hands-off baking method that produces a custardy-smooth egg filling. We then tucked squares of the baked eggs plus kimchi, avocado, and tangy mayonnaise into toasted rolls and added a refreshing sprinkle of cilantro.

[French Potato Pie](
French Potato Pie
Versions of this delicious potato and cream pie recipeâknown as tourte aux pommes de terre or pâté aux pommes de terreâexist throughout central France. Though many are made using puff pastry, we opted for somewhat less common pâte brisée (aka pie dough) for its crisp, sturdy texture. After preparing the potatoes, adding them to simmer with cream creates the taste and texture that makes this recipe so decadent. To ensure that the cream fully coated the potatoes, we added a pinch of baking soda to the cooking water to help break down the potatoesâ exteriors and release starch that would thicken the cream.

Apple-Blackberry Betty
An apple Betty is like an apple crisp, but instead of a crumbly butter/sugar/flour topping, it has slightly sweetened bread crumbs on top of the apples (but for our recipe we’ve added them to the bottom, too!). A combination of two types of apples mixed with just a little brown sugar gave our Betty a sweet-tart flavor, and vanilla and a touch of nutmeg added subtle depth. Two tablespoons of water mixed into the apples created steam in the oven to jump-start the cooking, ensuring that the apples would be luxuriously soft. Bread crumbs enriched with butter and brown sugar and pressed into the bottom of the baking dish accommodated any excess moisture shed by the apples as they cooked, while those on the top turned crisp and brown.

Used properlyâand safelyâthe mandoline can be a magical device, turning out produce that looks like itâs been cut by a chef from a four-star restaurant, and in record time. But all too often, these tools disappoint us; they cut poorly, skid around, or are just plain dangerous to use. We wanted to know which mandolines were best, so we bought eight models, priced from about $24 to about $200, and put them to the test. Which mandoline had an edge over the competition? Alex B. of Boston, Mass., has found that a funnel and a toothpick make an efficient system: He simply slides the toothpick between the rim and the bottom of the funnel.
