In the wintertime, I make several batches of soup or stew a week so that there’s always an easy, warm meal at the ready. For help with all this cooking, I rely on three key pieces of equipment: a large Dutch oven, a pressure cooker (or an Instant Pot), and a slow cooker. Here are my go-to winter soup and stew recipes. [Farmhouse Chicken Noodle Soup →]( I make this soup year-round, and we eat it for dinner several times a month. Not only is it fast, but the flavor of the broth is deep and rich because the pressure cooker pulls the flavor from the bones. Plus, I love that it uses a whole chicken and that you just plunk the whole thing right into the pot, so there’s no raw chicken butchering. [Slow-Cooker Beef and Barley Soup →]( Using a slow cooker is perfect for this recipe because the long, slow cooking method turns the meat meltingly tender. Plus, it’s relatively hands off. I’ve found that this soup freezes like a dream, so I often double the recipe. I also like giving frozen quarts of this particular soup to my brother and my parents for Christmas; they love having homemade soup at the ready, and I like being able to cook for them even though they live far away. [Goan Pork Vindaloo →]( This is a relatively new recipe to me, but it has quickly become a house favorite. It’s not spicy (so it appeals to wide range of palates), but it has that deep, rich flavor that I associate with vindaloo. I like to serve it with good naan from a local Indian market. [French-Style Pork Stew →]( This ranks in the top three of my all-time favorite stews. The flavor of the pork is a welcome change from the standard beef stew, and I particularly like the brothy sauce laced with Napa cabbage. I’ve found that its flavor is even better when served the next day, as long as you don’t overcook the cabbage on the reheat. [Brazilian Shrimp and Fish Stew (Moqueca) →]( This recipe brings the house down every time. The flavors of coconut milk, lime, cilantro, and seafood are just straight-up magical. Plus, the recipe is dead simple. Don’t skip the pepper sauce, and be sure to serve it with rice so that you have something to help soak up the sauce left at the bottom of the bowl.
