Some of my favorite dishes feature veggies that shine in the colder months. Our version of Portugal’s [Caldo Verde]( is homey and soothing, loaded with collard greens, Yukon Gold potatoes, and chorizo. I love the way the faintly mineral-y greens, earthy potatoes, and savory sausage enhance each other’s flavors. Another veggie-forward favorite is this [Butternut Squash Galette with Gruyère](. Creamy, sweet butternut squash and nutty Gruyère are a perfect pairing, and this galette is so versatile. Whether it’s the main course or a side dish, piping hot or reheated the next day, this galette is a winner! Finally, winter is when, in my opinion, salads are at their best. Endives, chicories, radicchio, and escarole, with their varying levels of bitterness and assorted colors and textures, are my go-to greens. I love them paired with rich, salty, savory ingredients such as guanciale or pancetta. One of the best expressions of this combination is [Salade Lyonnaise](. Here, poached eggs bring additional richness and mustard and black pepper punch up the flavors. My other favorite winter salad is a [wedge salad](. Instead of iceberg, it starts with a hearty and flavorful chunk of radicchio. That purple wedge is quickly browned in a skillet and smothered in a rich dressing that comes together with a couple swirls of a whisk. It’s a warm, wintry salad that’s sure to please.
