Yes, I will be roasting turkey for 19 people next week, and I will do an admirable job. But for me the meal is really all about the sides. Here’s what I’m serving. It’s not Thanksgiving in my house unless there’s [Mashed Potato Casserole]( on the table. This recipe actually changed the way I think about Thanksgiving cooking. You see, my family demands mashed potatoes. But preparing mashed potatoes for a crowd is simply miserable on this busy day. Instead, I make this egg-enriched version a day in advance, stash the casserole dish in the fridge, and then bake the spuds when the turkey comes out of the oven. The eggs help the potatoes to soufflé a bit, and the craggy top browns beautifully. It’s better than “regular” mashed potatoes and SO much easier. Every Thanksgiving cook needs dishes that don’t require last-minute attention. For me [Brussels Sprout Salad]( plays this role. Many people don’t like cooked brussels sprouts but most everyone enjoys coleslaw—and that’s what this dish is, with shredded “little cabbages” as the star. The lemony dressing adds much-needed zing to the meal. The recipe calls for pine nuts and Pecorino Romano, but just as often I use walnuts and Parmesan. Thanksgiving sides tend to have a similar, often sweet, flavor profile. That’s why I love [Skillet-Charred Green Beans with Sesame-Orange Topping](. It’s fine to steam the beans in the microwave several hours in advance, and the topping is also make-ahead. You will need to char the beans in a hot skillet just before serving. Give this task to a family member who wants to be helpful. They can’t mess up, since the goal is to char the beans! While I may not care much about the turkey, I do care deeply about gravy. That’s why I make our [Best Turkey Gravy](. Any new guest at my table is sure to comment that this gravy is a revelation. It’s also cook-friendly, because you do 90 percent of the work on Wednesday.
