[Browned Butter Mashed Potatoes](

Cooking Science When butter is heated slowly, its water evaporates and its milk solids separate and undergo the Maillard reaction, at which point they take on a complex, nutty flavor. Test Kitchen Technique
When mashing potatoes, the goal is to use the gentlest touch possible to avoid bursting the potatoesâ swollen starch granules. Once released, the sticky gel inside will turn the mash gluey. We recommend a potato masher for this recipe, but you can also use a ricer or a food mill. We donât recommend using an electric mixer.

Test Kitchen Technique
Why do these rolls need a short rest? We use a mixing technique called autolyse; this is mixing wet and dry ingredients togetherâwithholding the sugar and saltâand letting the mixture stand for 15 minutes. Then you add the sugar and salt and knead the dough in the stand mixer. The resting period allows the flour to fully hydrate (both sugar and salt can slow hydration), resulting in sufficient gluten formation (during subsequent kneading and rising) that leads to tall, fluffy rolls.
