One thing is for certain—this year I’m designing my menu so that I can spend less time tied to the kitchen. And, to shake things up, in addition to the usual Thanksgiving stalwarts, I’m going to be adventurous and include a few new takes on the classic sides and dessert. This will be my twenty-fourth Thanksgiving at America’s Test Kitchen, and it continues to be a pleasure for me to know that when you cook our recipes, you’re setting a place for us at your holiday table. Sweet potato casserole is getting the day off this year because this recipe for [Roasted Butternut Squash with Pear and Pancetta]( is hard to beat. The browned squash and pear are wondrous, but the salty pancetta takes this dish over the edge. It’s great to serve at room temp too. Caramelized apples, flaky pastry, and the most stunning presentation make this [Apple Tarte Tatin]( the perfect dessert for this year’s celebration. The tart can be made well in advance too.
