Everyone is busy and hungry. Here are my top five dinners that are both easy to prepare and have simple flavors that are easy to adapt for picky eaters. Also, I almost always add extra vegetables to whatever I’m cooking—especially riced cauliflower and broccoli, which I keep in the freezer and which are nearly impossible to detect in the final dish. I love how [One-Pot Baked Ziti with Sausage and Spinach]( cooks the pasta right in the sauce, then the whole thing goes into the oven to melt the cheese. Adding the spinach towards the end of cooking is brilliant so that it retains its color and flavor. I make [One-Pan Roast Chicken with Root Vegetables]( at least once a month and it never disappoints. I’ve also found that you can prep [the sheet pan]( up to a day ahead of time; simply cover it with plastic wrap and refrigerate it. Also, because it can be made ahead, I like to drop this off at the houses of friends who are in need; I copy the roasting instructions onto a sticky note so that they can just throw it into the oven whenever it works for them. We eat a [salad with grilled chicken]( at least once a week. You barely need a recipe for this sort of thing, but the best part of this simple recipe is the grilled bread. The bread makes it a meal. For [Sheet-Pan Bratwurst Sandwiches with Red Potato and Kale Salad]( the method for oven-roasting the sausages was a game changer for me. Feel free to swap in other types of sausage for the bratwurst as you like. If it’s been a hard day, chicken noodle soup will make everything (and everybody) feel better. [This quick version]( is my go-to when time is tight. Also, I often throw in a few other vegetables, including cauliflower and something green, such as Swiss chard or spinach.
